Cheese and Tomato Frying Pan Pizza

About this recipe:
Use your large frying pan to make this super Cheese and Tomato Frying Pan Pizza. Quick and easy to make pizza which is finished under the grill using our Pasta and Pizza Flour. You can make the dough in advance to speed everything up, although you will need to bring it back to room temperature if it has been in the fridge for a long time. Mozzarella is traditional cheese to top pizza although you can use any grated cheese.
Equipment:
mixing bowl x 2 and frying pan
Ingredients:
150g Doves Farm Organic Pasta and Pizza Flour
½ tsp Doves Farm Quick Yeast
pinch salt
75ml tepid water
2 tbsp olive oil
1 tbsp tomato purée
1 tomato, sliced
100g cheese, grated
salt and pepper
flour, for dusting
olive oil, for brushing
Method:
Pizza Dough
- Put the flour and yeast, into a large bowl, blend them together and stir in the water until it looks lumpy, then stir in the salt and oil.
- Using your hands gather together the doughy mass and knead in the bowl for 100 presses.
- Invert another bowl over the top and leave in a warm place, for at least 40 minutes. The dough can rest longer or even overnight in the fridge.
Frying Pan Cooking
- Set a 25cm/10” inch frying pan to get really hot
- Tip the dough onto a floured surface, stretch and fold it onto itself a few times then roll it into a 25cm/10” inch circle.
- Transfer the dough to the hot pan, swirl tomato puree over it, slice and add the tomato then top with grated cheese.
- Cook on a high heat for 5-6 minutes, meanwhile pre-heat the grill.
- Transfer the pan to the hot grill for 2-3 minutes.
