Cheese and Onion Spelt Quiche with Spelt Pastry


  • 200g Doves Farm Organic Wholemeal Spelt Flour
  • 100g butter
  • 7 tbsp cold water
  • 4 large onions
  • 3 tbsp oil
  • 3 eggs
  • 100ml cream
  • 100g cheese, grated
  • salt and pepper



  1. Put the flour and butter into a large bowl and stir with a fork or pastry blender until the mixture resembles breadcrumbs.
  2. Stir in the six spoons of water.  If the pastry does not come together easily add the remaining water a little at a time.
  3. Using your hands, gather the mix together to form a smooth ball of pastry dough.
  4. Cover the pastry with parchment or cling film and rest it for 30 minutes.
  5. Rub a little butter around the base and edges of a 23cm/9” quiche dish.
  6. On a floured surface, roll out the pastry into a circle a little larger than the dish.
  7. Carefully transfer the pastry to the dish pressing it into position to fit around the edges.

Cheese and Onion Filling

  1. Pre-heat the oven.
  2. Slice the onion and put it into a frying pan with the oil.
  3. Cook over a medium heat until the onion is soft and just starting to brown which will take 15-25 minutes.
  4. Break the eggs into a mixing bowl, add the cream and beat together well.
  5. Grate the cheese into the bowl, season with salt and pepper and stir to combine.
  6. When the onion is ready, spread it out over the base of the prepared pastry.
  7. Tip the prepared egg mixture over the onion and bake immediately for 40-45 minutes.
