This lighter style of rye bread is a ‘half and half’ loaf, made with wholemeal rye flour and strong white bread flour. Half and Half loaves are a great way to bake with artisan flours making loaves such as Emmer and White 50-50 Bread Machine Loaf or Einkorn and White Flour 50-50 Bread Machine Loaf.

Equipment:

Ingredients:

1 tsp Doves Farm Quick Yeast
250g Doves Farm Organic Wholemeal Rye Flour
250g Doves Farm Organic Strong White Bread Flour
1 tsp sugar
1 tsp salt
1 tbsp oil
340ml water

Method:

  1. Put the ingredients into the bread machine pan in the order recommended by the machine manufacturer.
  2. Close the lid and turn the machine to the basic rapid bread setting.
  3. Select your preferred crust option if available on the machine.
  4. Check the pan is locked into position and start the machine.
  5. Remove the bread pan from the machine as soon as it has finished baking.
  6. Tip the bread out of the pan and remove the mixer paddle from the bottom of the loaf.
  7. Cool the bread on a wire rack.
