Blue Cheese and Walnut Quiche


  • 100g Doves Farm Organic Plain White Flour
  • 50g butter
  • 2 tbsp cold water
  • flour for dusting
  • 3 eggs
  • 100ml single cream
  • 150g blue cheese
  • 100g walnut halves
  • salt and pepper



  1. Rub a little butter around an 20cm/8”round, loose bottom tin and pre-heat the oven.
  2. Put the flour and butter into a large bowl.
  3. Use a fork or pastry blender to work the butter into the flour until the mixture resembles breadcrumbs.
  4. Stir in the water.
  5. Using your hands gather the mix together to form a smooth ball of pastry dough.
  6. Put the dough on a floured surface, or between two pieces of cling film, and roll it into a 25cm/10” circle.
  7. Transfer the pastry to the prepared dish or simply press it into the dish using your fingers.
  8. Cut away any pastry that hangs over the edge of your dish.


  1. Pre-heat the oven.
  2. Break the eggs into a mixing bowl, add the cream and beat together well.
  3. Cut the cheese into small cubes, or crumble it with your fingers, and add it to the bowl.
  4. Season with salt and pepper, stir and tip the mixture into the prepared pastry case.
  5. Place the walnuts decoratively over the surface.
  6. Bake for 20 minutes then reduce the temperature to 170°C, Fan 150°C, 325°F, Gas 3 for 15 minutes.
