Gluten Free Banana and Chocolate Chip Loaf Cake


  • 2 ripe bananas
  • 100g coconut oil
  • 100g sugar
  • 2 eggs
  • 200g FREEE Self Raising Flour
  • 100g Doves Farm Plain Chocolate Chips


  1. Line a 1kg/2lb loaf tin with parchment, pre-heat the oven, peel and mash the bananas.
  2. Put the oil and sugar into a mixing bowl and beat together.
  3. Add the mashed banana and beat again.
  4. Beat in the eggs one at a time, ensuring each is well incorporated before adding the next.
  5. Sieve the flour into the bowl then stir it into the mixture.
  6. Stir in the chocolate chips.
  7. Tip the mixture into the prepared tin and smooth the top.
  8. Bake for 60-65 minutes, until the sponge springs back when touched.
  9. Leave the cake to cool in the tin for an hour before transferring to a wire rack.
