Apple Pie on a Plate

Makes 20cm/8” pie

This traditional fruit pie, which can be made with apple, plums or pears makes a super easy family desert. Serve with cream or custard.

Ingredients

Change Quantities:
  • PASTRY
  • 100g Freee Plain Flour
  • 50g butter
  • 3 tbsp tepid water
  • 1 tsp demerara sugar
  • FILLING
  • 200g apples (or pears or plums)
  • 25g granulated sugar
  • 1 tbsp demerara sugar

Pastry

  1. Put the flour and butter into a large bowl.
  2. Use a fork or pastry blender to work the butter into the flour until the mixture resembles breadcrumbs.
  3. Stir in the water to make a slightly sticky dough. Cover the dough and leave it to rest for 15 minutes.
  4. Pre-heat the oven.

Filling & topping

  1. Rub a little butter around the rim of a 28cm/10” tin plate or pie dish.
  2. Peel, core and slice the apples (or pears or half and destone the plums) onto the dish.
  3. Sprinkle the granulated sugar over the apples.
  4. Roll the prepared dough into a 25cm/10”circle between two pieces of cling film or parchment.
  5. Carefully transfer the pastry to the prepared dish, removing the film or parchment.
  6. Cut away any pastry that hangs over the edge of the dish.
  7. Sprinkle with Demerara sugar and make some cuts in the pastry to allow steam to escape during cooking.
  8. Bake for 35-45 minutes.
