Gluten Free Apple Pie on a Plate

A traditional and simple way to make an apple pie using a metal plate. This easy family desert can also be made using plums, pears and currents. It’s delicious served with cream or custard.

Ingredients

Change Quantities:
  • PASTRY
  • 100g FREEE Plain White Flour
  • 1 tsp icing sugar
  • ¼ tsp FREEE Xanthan Gum
  • 50g butter
  • 1-2 tbsp tepid water
  • APPLE PIE
  • 500g apples
  • 50g granulated sugar
  • 2 tbsp water
  • 1 tbsp sugar
  • 3 cloves (optional)
  • 1 tbsp Demerara suagr

Pastry

  1. Put the flour and butter into a mixing bowl.
  2. Use a fork or pastry blender to work the butter into the flour until the mixture resembles breadcrumbs.
  3. Stir in enough water to make a slightly sticky dough, cover the dough and leave it to rest for 15 minutes.
  4. Pre-heat the oven.

Apple Pie

  1. Rub a little butter around the rim of a 28cm/10” tin plate or pie dish.
  2. Peel, core and slice the apples onto the dish, forming them into a dome shape.
  3. Add two spoons of water, sprinkle over the sugar and press the cloves, if used, into the apple dome.
  4. Dust the work surface with flour, put the dough in the middle and sprinkle it with more flour.
  5. Roll the dough into a circle a little larger that the plate.
  6. Carefully lift the pastry onto the dish over the apples.
  7. Cut away any pastry that hangs over the edge of the dish.
  8. Gather the off-cuts into a ball, roll them out and cut some decorative leave shapes. Moisten the base of each a lay it on the pastry.
  9. Make a hole in the top and some cuts in the pastry to allow steam to escape during cooking. Sprinkle with Demerara sugar
  10. Bake for 40-45 minutes.
