Air Fryer Chocolate Loaf Cake

There’s nothing quite like a rich, homemade chocolate loaf cake, and this easy air fryer recipe makes it simpler than ever. Perfectly moist with a deep cocoa flavour, this classic bake is ideal for afternoon tea, a cosy treat, or a delightful homemade gift.

Equipment:
air fryer, mixing bowl and 500g/1lb tin or silicone mould
Ingredients:
100g plain chocolate
5 tbsp boiling water
2 eggs
100g caster sugar
5 tbsp sunflower oil
½ tsp vanilla extract
125g Doves Farm Organic Wholemeal Self Raising Flour
75g butter or plant butter
50g soft brown sugar
oil, for tin
Method:
- Select a 500g/1lb tin or silicone mould that fits comfortably into your air fryer leaving some headroom for the cake to rise (remove the trivet if necessary). Rub oil around the inside of the tin or insert a baking liner.
- Break the chocolate into small cubes, save half for the topping then add 5 tablespoons of boiling water to the rest and stand for 5 minutes.
- Set the air fryer to 160°C and run for 5 minutes.
- Break the eggs into a mixing bowl, add the sugar and beat until foamy then beat in the oil and vanilla extract.
- Stir the chocolate until smooth, add it to the bowl and beat again.
- Add flour into the bowl, mix well then pour the mixture into the prepared tin.
- Quickly open the air fryer, put the cake inside and bake for 30 minutes at 160°C.
- At the end of cooking, leave to cool inside the machine for 15 minutes then remove and allow to stand for 5 minutes before turning the cake out onto a wire rack to cool.
- Put the brown sugar into a saucepan over a gentle heat. As the sugar starts to liquify, add the butter and shake the pan a couple of times as it melts. Add the reserved chocolate cubes and shake the pan as it melts.
- When everything looks runny, stir gently to combine then remove from the heat.
- Allow to cool and thicken then drizzle over the top the cold cake.
