Khorasan is an ancient grain which can be traced back to the Fertile Crescent and legends exist of it being found in Egyptian tombs.

The high protein (16%)makes a light airy loaf. I use 20% with a strong white in my sourdough bread. Its the best I've tasted and have put it again on my birthday list: a real winner!

I add 20% Khorasan to the dough for a white loaf. It adds flavour and some fibre without affecting the rise or texture. Khorasan also makes an excellent wholemeal loaf.

This wholemeal Khorasan flour is wonderful! I followed the recipe on the packet. Just did not add the Z seasoning. The bread is perfect by itself. Very soft and light and delicious. Just ensure you keep adding oil to your hands when kneading. If not, the dough will get very sticky. If this happens, just add more oil to your hands, the dough quickly returns to its silky smooth texture. I’m going to make these again, just not flat, but mini cobs instead. Such a lovely grain to use instead of the common wheat we use today that is used in most store bought bread.
