I bought 3 packets of Emmer because I wanted to experiment making bread with ancient grains. It does not rise very much but it is fantastic bread. I love it. I believe it has a low glycemic content, like spelt and unlike modern wheat. So it's a very healthy option. Thank you Doves Farm for stocking it. Just ordered more.

Also fantastic for pastry. It's crumbly and hard to roll, but even patched up under a pie (thinking Bakewell or apple ... or anything I guess) it has a brittle biscuity nuttiness that is unbeatable. Also sprinkled on par-boiled potatoes before roasting... very good.

Amazing to see this flour available. I have used it for making flatbreads, delish , and also scones ( date and ginger) also delish. I personally will stick with the scones as flatbreads need rolling out and that is too much like hard work for me, but if you are not so lazy simply search for emmer recipes, there are lots out there, so much nicer than regular wholemeal. It is naturally low in gluten, so I would not expect it to rise on its own, so soda bread or mixed with rye? The world is yours to try.

Delicate sweetness that can’t be found in modern day wheat. It’s slightly grainy (preferred) compared to the powdered flour we have today. I usually use chappatti medium whole grain flour for flat breads, naans, sliced bread etc but am completely converted. Anyone suffering from wheat allergy might find Emmer flour a good alternative. It’s not heavy and doesn’t create gas. Best part is it fills you up and keeps you going throughout the day. Pity not sold in bulk form. Also hoping for it to reduce in price in the near future… my family (large) goes through 10kg’s of flour monthly!
