Spelt grain, triticum speltum, is mentioned in the Old Testament book of Ezekiel. Hildegard of Bingen praised it in the C12th and it has once again become popular with chefs and nutritionists.

I love this flour, I and eat spelt in accordance with my Low FODMAP diet, I much prefer to bake a simple organic loaves of bread rather than eat the pre made loaves you can buy in supermarkets that are very expensive and mass-produced. I love this flour it's easy to get a good rise, with a bit of practice, and it makes super tasty slightly dense loaves which are great with soup or toasted on cold winter mornings. My only criticism is it's really hard to get hold of as most supermarkets and health food shops don't seem to stock the white spelt. I sometimes use the wholegrain but it is much heavier and is harder to get a good rise from. Overall I really like this flour and wish I you could buy it in more places!

I am not allowed to eat wheat. the spelt flour is not crossed with wheat? is it a T55? Thank you

Spelt is an ancient grain which is believed to have been used widely by the Romans. The grain is a variety of wheat. Often those with wheat intolerances may have trouble with the over-popular variety of strong modern wheat used in most pastas, breads, milled flours etc. You may therefore be fine to cook with Spelt Flour, even though it is a variety of wheat; however trialing this will be your own decision. Spelt contains gluten and is therefore not suitable for Coeliacs.

I'm not 'celiac' but prefer to eat gluten free bread as I find the body digests it more easily. Doves Farm Spelt Flour is the best I have ever used and matches Doves Farm Quick Yeast perfectly. The texture, taste, quality and ease of baking with this flour is better than any other. Highly recommended!

This flour has been a god send as my son was diagnosed at 9 months with an intolerence to wheat and gluten but he is thriving with having spelt instead and it will make anything sauces pancakes cakes and bread!
