Einkorn is the earliest type of farmed wheat and is said to have been developed by farmers in the Middle East over 20,000 years ago, spreading to Transcaucasia, south-western Europe, the Balkans and the Mediterranean. When early man started to lead a settled rather than nomadic lifestyle, he began to grow cereal and keep animals as a way of producing food for his community. Although einkorn is adaptable to a wide range of soil conditions, it has a small seed head which produces only a small amount of grain, so yields soon became insufficient to feed the settled and successful agricultural communities.

At Doves Farm we have been growing this tall, elegant crop since 2009. Golden in colour, einkorn has an earthy flavour and given its fragile gluten can become sticky when over-kneaded.
