I have experimented and discovered that using your gluten free self raising flour in my standard recipe works perfectly.

Ingredients

227 gWhite gluten free s/r flour
227 gGolden caster sugar
227 gClover
4 medium free range eggs

Method

  1. Either cream together the Clover and sugar, add the flour with eggs and flavourings and beat well.
  2. OR
  3. Use standard all in one method
  4. Bake at 180C for around 30-35 minutes.

Flavourings are myriad, plain with vanilla extract, lemon drizzle, coffee walnut, fruit upsidedown cake, apple topped cinammon mixture etc. Any style of flavourings you would use with ordinary s/r wheat flour works beautifully. The texture is a little different from the white wheat flour but it is still moist and more than acceptable.
 

Temperature & cooking time:
180C between 30-35 mins
