Since I'm Italian I was so desperate to find a recipe for homemade pasta. All the GF recipes on the net tend to use GF flour which i just couldn't get hold of, so i converted my old recipe hoping it would work. Guess what it did. my husband and kids couldn't tell the difference
These muffins taste fabulous! I have never known someone not to like them, and everyone who tries one wants a second one! :)And Best of all they are Gluten, Wheat, Nut, Dairy, Soy, and Yeast Free!

This recipe makes about 24 quick and easy muffins, with a lovely syrupy sweetness from the dates and bananas. Alternatively bake in a loaf tin for a sweet banana bread.

Lovely taste. Depends on how crunchy you want them to be. I like them crunchy, my wife likes them a bit soft. I think 16-18 mins is good.
Remind me of jam tarts - good thing with these is you can choose more than one flavour jam 1/2 of one flavour and 1/2 another flavour. Very nice with ice cream/ warm custard
This started out as a streusel but I modified it to be seasonal and glutan free. The damsons are from a lovely farm in lancashire, hence the name, but you could use plums (though they have less flavour). Its is good warm or cold , and quite moist. Its not meant to rise like a sponge cake & if you sprinkle some sugar on top it gives a crisp top.
hese cupcakes are very light and a brilliant colour due to the sweet potato and lemon rind. I have only experimented using 1 cup of sweet potato rather than 2 as I am not sure if the mixture might be too dry. I also found that this recipe is best if it is let to rest for about 20 minutes after mixing to allow the bicarbonate of soda to activate, thus making the mixture light. This recipe makes about 16 cupcakes. If you are not worried about sugar then you can ice them with a simple lemon butter icing or make a lemon drizzle and enjoy!
