Dark rye bread (Danish-style)

This is a recipe for the traditional dense Danish rye bread that, when thinly sliced, is used to make Danish smørrebrød (open sandwiches). The preparation time is in excess of 24 hours and requires a 4 lb loaf tin.

Excellent Wheat-Free White Loaf from a Breadmaker

Tweaking previous recipes I have found, this has been my most successful - slices well and makes nice bread for a day or two. Great for freezing and makes excellent toast! I am using a breadmaker with the capacity of a 2lb loaf.

Cooked from recipe on SR gluten free flour but added buttercream (butter and icing sugar quantity to your taste) and a spoon of rhubarb and ginger jam (from jar) to decorate! Lush! Husband said best cupcakes I have made (even against gluten ones!).
