Dark chocolate cake made with carrots

This is one of my favourite cakes as it contains 2 cups of finely grated carrots and dark chocolate. It is a great cake for getting children to eat vegetables, as after it is baked there is hardly any trace of the carrots. I also vary it with either a hint of ginger or a hint of cinnamon. Ideally it is best to use 100% dark chocolate but it works just as well with 90% to 70% chocolate.

Dosas are especially popular in Southern India and are traditionally stuffed with a spicy potato or lentil filling and can be eaten on their own or served with curry.
