Raspberry Linzertorte

Half cake half pastry, this delicious cake is of Austrian heritage.

Ingredients

150 gPlain White Flour
½ tspGround Cinnamon
150 gGround Almonds
75 gCater Sugar
1 tspGrated Lemon Rind
150 gButter
2 Egg Yolks
1 tspVanilla Extract
4 tbspsRaspberry Jam
25 gIcing Sugar

Method

  1. Mix together the flour, cinnamon, almonds, sugar & grated lemon rind.
  2. Add the butter and mix with a fork until everything looks like breadcrumbs.
  3. Add the egg yolks and vanilla then bring everything together into a dough.
  4. Cut off and chill a quarter of the dough.
  5. Press the rest of the dough into an oiled 25cm/9''tin.
  6. Spread the jam over pastry.
  7. Put the chilled dough on a floured surface and roll it into a 20cm/8” circle.
  8. Use a knife to cut into 1cm/1/2'' wide strips of dough.
  9. Lay the dough strips across the jam to form a crossed lattice effect.
  10. Bake in pre-heated oven for 40 minutes.
  11. When cool dust with icing sugar.
