Golden Christmas Cake

Packed with mixed dried fruits this is a typical cake for Christmas and other important celebrations.

Ingredients

Cake
   
125g/5oz   Butter
125g/5oz   Soft Brown Sugar
3   Eggs
1tsp   Mixed Spice
2tbsp   Brandy or Fruit Juice
1   Lemon Rind & Juice
150g/6oz   Plain White Flour or Fine Wholemeal Flour or Wholemeal Spelt Flour
400g/16oz   Mixed Dried Fruits
100g/4oz   Glacé Cherries
100g/4oz   Mixed Peel
100g/4oz   Almonds
   
Topping
3 tbsp   Apricot jam
200g/8oz   Marzipan
2   Egg Whites
400g/16oz   Icing Sugar
1tsp   Vegetable Oil
Ribbon

Method

  1. Cream together butter and brown sugar until light and fluffy.
  2. Beat in the eggs, mixed spice, brandy, lemon rind and juice.
  3. Mix the flour.
  4. Stir in the mixed dried fruits, glace cherries, mixed peel and almonds.
  5. Push the mixture into a deep greaseproof lined 20cm/8"cake tin.
  6. Bake in a pre-heated oven for 2/2¼ hours.
  7. Allow to cool in the tin for 12 hours.
  8. Warm the apricot jam and spread it over the cold cake.
  9. Roll out marzipan into a large circle and lift it onto the cake.
  10. Press the marzipan around the cake and trim off any excess.
  11. In a bowl beat the egg whites until stiff.
  12. Beat in the icing sugar and oil a little at a time.
  13. Spread some icing over the edges of the cake.
  14. Stand the cake on a bowl and spread the remaining icing over the cake.
  15. Decorate the cake with a ribbon.

150°C/Fan130°C/300°F/Gas 2

I made this with gluten free plain flour, and it was outstanding! Cooked perfectly, great flavour, fantastic texture - not too heavy, not too crumbly. Absolutely perfect!
