Gluten Free Raspberry & Coconut Muffin

These muffins taste fabulous! I have never known someone not to like them, and everyone who tries one wants a second one! :)And Best of all they are Gluten, Wheat, Nut, Dairy, Soy, and Yeast Free!

Ingredients

200 gGluten & Wheat Free Self Raising White Flour
150 gSugar
½ tspSalt
50 gDessicated Coconut
100 mlSunflower Oil
150 mlCoconut Milk
1 Egg
150 gRaspberries (Fresh or Frozen)

Method

  1. 1) Preheat your oven to Gas Mark 6.
  2. 2) Line Muffin tin with Paper Cases
  3. 3) Combine flour, sugar, salt and dessicated coconut in a mixing bowl and make a well in the center
  4. 4) In a jug or separate bowl combine the oil, coconut milk and egg. Beat with a fork.
  5. 5) Gradually combine the wet mixture into the dry ingredients and mix until smooth
  6. 6) Fold in the raspberries.
  7. 7) Spoon into paper cases, and sprinkle dessicated coconut on top of each one.
  8. 8) Bake for 25 minutes or until you can stick a knife in and it comes out clean.

Temperature & cooking time:
25 Minutes. Gas Mark 6

These were incredibly easy to make and they were lovely. The texture was fab, really springy (I did add a tiny bit of xantham gum). I tried them out on non-coeliac friends, who didn't know they were gluten-free and couldn't tell the difference. I think the next time I make them I'll add more raspberries. Great recipe - thumbs up from me!

I made these muffins today, and they were lovely. Not dry at all. Both me and my hubby are intolerant to wheat and gulden. So this was a lovely treat.
I have just found Doves farms website and it has changed our lives. I have gone without for years or made terrible substitutes. In a week I have made a chocolate cake and Gulten free pancakes. All yummy. Super big thank you.

These little muffins are delicious, and very easy to make. I had no coconut milk so used ordinary milk instead.
