Gluten Free Hot Cross Buns
These gluten free hot cross buns will be great for the whole family to enjoy.
Ingredients

Gluten Free White Bread Flour |
| 1tsp |
Quick Yeast |
| 1/2tsp |
Salt |
| 50g/2oz |
Sugar |
| 1tsp |
Mixed Spice |
| 75g/3oz |
Currants |
| 50g/2oz |
Chopped Mixed Peel |

200ml/8floz

Milk |
| 1 |
Egg |
| 25g/1oz |
Melted Butter |
| Topping |

| 2tbsp |
Gluten Free White Flour |
| 3tbsp |
Milk |
| 3tbsp |
Cold Water |
| 3tbsp |
Boiling Water |
| 3tsp |
Sugar |
Method
- Mix together the flour, quick yeast, salt, sugar and mixed spice.
- Stir in the currants and mixed peel.
- Add the milk and egg mixing well.
- Leave the dough covered with a tea towel, in a draught free place, for 90 minutes until spongy.
- Meanwhile in a separate bowl mix together the flour and milk for the topping to form a soft pastry dough and leave it to rest for 30 minutes.
- Roll the pastry on a floured surface until thin and cut narrow strips.
- When the dough has risen mix in the melted butter.
- Place round spoonfuls of dough onto an oiled baking tray.
- Lay strips of pastry across each ball of dough to form a cross.
- Brush each ball of dough with cold water.
- Leave to rise for 35/40 minutes.
- Bake in a preheated oven for 15/20 minutes.
- In another bowl dissolve the sugar in the boiling water to make a syrup.
- When the buns are removed from the oven brush the tops with the syrup.
Temperature & cooking time:
200°C/Fan180°C/400°F/Gas 6 - 15/20 minutes
