Gluten Free Hot Cross Buns

These gluten free hot cross buns will be great for the whole family to enjoy.

Ingredients

Dough  
250g/10oz   Gluten Free White Bread Flour
1tsp   Quick Yeast
 1/2tsp  Salt
 50g/2oz  Sugar
 1tsp  Mixed Spice
 75g/3oz  Currants
 50g/2oz  Chopped Mixed Peel

 200ml/8floz

 Milk
 1  Egg
 25g/1oz  Melted Butter
 Topping  
 2tbsp  Gluten Free White Flour
 3tbsp  Milk
 3tbsp  Cold Water
 3tbsp  Boiling Water
 3tsp  Sugar

Method

  1. Mix together the flour, quick yeast, salt, sugar and mixed spice.
  2. Stir in the currants and mixed peel.
  3. Add the milk and egg mixing well.
  4. Leave the dough covered with a tea towel, in a draught free place, for 90 minutes until spongy.
  5. Meanwhile in a separate bowl mix together the flour and milk for the topping to form a soft pastry dough and leave it to rest for 30 minutes.
  6. Roll the pastry on a floured surface until thin and cut narrow strips.
  7. When the dough has risen mix in the melted butter.
  8. Place round spoonfuls of dough onto an oiled baking tray.
  9. Lay strips of pastry across each ball of dough to form a cross.
  10. Brush each ball of dough with cold water.
  11. Leave to rise for 35/40 minutes.
  12. Bake in a preheated oven for 15/20 minutes.
  13. In another bowl dissolve the sugar in the boiling water to make a syrup.
  14. When the buns are removed from the oven brush the tops with the syrup.

Temperature & cooking time:
200°C/Fan180°C/400°F/Gas 6 - 15/20 minutes
