Gluten free Homemade Tagliatelle / lasagna

Since I'm Italian I was so desperate to find a recipe for homemade pasta. All the GF recipes on the net tend to use GF flour which i just couldn't get hold of, so i converted my old recipe hoping it would work. Guess what it did. my husband and kids couldn't tell the difference

Ingredients

300 gGluten Free Plain Flour
1 tbspXantham Gum
1 tspSalt
5 Eggs
1 ½ tbspsOlive oil

Method

  1. 3 / 4 servings
  2. Mix brielfy all dry ingredients in the food processor (Or by hand)
  3. All the eggs & oil and mix until it resembles breadcrumbs.
  4. Remove from food processor and nead until you have a perfectly formed dough ball.
  5. Wrap in cling film and place in the fridge for 15 mins.
  6. Remove from fridge divide the dough into 4 separate balls.
  7. Sprinkle a little GF Plain flour to avoid sticking. Get one of the balls and do as follows..
  8. 1. Roll out the dought until it's nice and thin.
  9. 2. Fold the pasta 4/5 times and roll out the dough really thin.
  10. Repeat step 1 & 2 about 6 times Now roll out the dough paper thin and cut into tagliatelle strips (Rectangles for Lasagna) Do the same with the rest of the dough balls.
  11. Fill a large pan of water add salt to taste and bring to boil. Add the tagliatelle and boil for 3 mins (al dente) or slightly longer depending on the thickness of your pasta.
  12. Serve up add your sauce and enjoy.

Temperature & cooking time:
3 mins depending on thickness

I am not that good a cook but had a go and found this so quick/easy to make, and tasted great.
I used Doves Gluten Free Plain Flour.
I made Lasagna sheets which needed lots of extra flour when rolling out as the mixture was sticky, but very easy to roll as the mix was quite elastic and not crumbly like with any other GF baking.

have tried this but do you use doves farm gluten free plain flour as it was not really clear

I have been searching for an easy gluten free pasta recipe and this is it. I tackled it today and it was delicious. Has anyone tried to freeze the dough or the pasta sucessfully?
