Ginger, Orange and Cardamom Cheesecake

Despite its name this is a delicately spiced baked cheese cake. Serve it with a cup of coffee or as a dessert.

75 gButter
150 gGinger Oat Biscuits
200 gFull Fat Cream Cheese
125 gCondensed Milk
1 tspGround Cardamom
2 tbspsMuscavado Sugar
1 Orange Rind & Juice
2 Eggs
1 tbspIcing Sugar

Method

  1. Allow the butter to soften in a large bowl.
  2. Crush the biscuits into crumbs.
  3. Add to the butter and mix well.
  4. Butter an 18cm/7" round serving dish.
  5. Spread the biscuit mixture over the base.
  6. Mix together the cream cheese, condensed milk, ground cardamom, muscavado sugar, eggs, orange rind and juice.
  7. Pour over the base and bake in a pre-heated oven for 35/40 mins.
  8. Allow to cool in the tin before carefully turning out, then dust the top with seived icing sugar.

Temperature & cooking time:
Fan Oven 150 / Conventional Oven 160 / Gas 4

Don't waste your money on this recipe, there must be something missing as the filling is only 1/2" deep when cooked and its sickly sweet, although cardammon and orange is a lovely I will use it elsewhere on a good cheesecake recipe.
