Earl grey tea is a lovely alternative to this tea loaf if you like earl grey.
Cup of strong tea
1lb of mixed fruit (Sultanas, raisins, glace cherries, dried apricots)
6oz soft brown sugar
1 teaspoon cinnamon
1 egg
9oz gluten free plain white flour
1/2 teaspoon of bicarbonate of soda
Add a cup of strong tea to the 1lb of mixed dried fruit and 6oz od soft brown sugar, soak for at least 3 hours, over night if possible.
Once the fruit has soaked add the egg and mix.
Sieve in 9oz plain flour and 1/2 teaspoon of bicarbonate of soda.
Mix thoroughly.
Add to a lined loaf tin and cook preheated oven Gas 4 for 1 1/2 hours.
Check after an hour. If the top is browning too quickly cover with parchment paper for the remaining time.
Cooked when sharp knife or skewer comes out clean.
Temperature & cooking time:
1 1/2 hours at Gas 4

Very easy delicious recipe - cooking on 180C with a fan I could reduce time by 10 mins next time. I replaced currants with chopped prunes & 1oz (25g) mixed peel. Nice and moist now on favourites list. Thank you

This was delicious, easy to make and a big hit with my hubby. I did add a large variety of fruit including gogi berries, dried mango and chopped dates to the fruitmix mentioned above. Also my diet is sugar-free so i substituted the sugar with a sweetener.
