Comfort food great with a cup of tea on a dark wet winters day

Ingredients

8oz gluten free plain flour

1 teaspoon baking powder

1 teaspoon of cinnamon

5oz marg

5oz soft brown sugar

1 tbsp black treacle

2 eggs 4oz dates, stoned and chopped

4oz sultanas

4oz currants

1 oz glace cherries

3 tbsp soya milk/normal milk

Method

Prepare 7" cake tin.

Sift flour and spice together and set aside.

Cream marg, sugar and treacle together until llight and fluffy.

Beat in the eggs.

Fold in the flour with the fruit and mix thoroughly.

Turn into the prepared tin and bake in a pre heated moderate oven (Gas 3) for 2-2 1/2 hours or until the skewer comes out clean.

Leave in the tin for about 5 minutes and then turn out onto a wire rack to cool.

Temperature & cooking time:
2-2 1/2 hours at Gas 3

Very easy to make but I did have to turn oven down & it took less than 2 hours. Came out of tin easily & it is a lovely light good fruitcake - can compete with those containing gluten.

We enjoyed this cake very much. I double lined the tin, sides & base. Will be cooking this agin

made this cake today and I think the temperature is too high and time too long as cake was very overcooked. Also the method does not say anything about adding milk which is in the ingredients
