Our recipe

This recipe will make about a dozen small pancakes without gluten, dairy products or eggs. Dosas are especially popular in Southern India and are traditionally stuffed with a spicy potato or lentil filling and can be eaten on their own or served with curry. Dosas are also delicious served with spicy Coconut Chutney.

100 gGram Flour
100 gRice Flour
1 Pinch of Salt
200 mlWater
1 Oil
2 tspsMustard Seed
2 tspsGround Turmeric
2 tspsGround Coriander
2 tspsGround Cumin
1 Green Chilli Chopped
2 tbspsOil
1 Large Potato
1 Onion
2 tbspsWater

Method

Dosa Pancakes
1. Mix together the gram flour, rice flour, salt and water to make a batter. In many households this batter is left to ferment overnight but it can be used immediately.
2. Lightly oil a heavy frying pan and heat well.
3. Pour in enough batter to cover the surface thinly.
4. Cook until the pancake is set and golden on the bottom.
5. Turn the dosa over and cook the other side.
6. Remove the cooked dosa and repeat the cooking process.
7. Serve warm dosa with a filling such as Spicy Potato or with Coconut Chutney.

Spicy Potato Filling
1. Put the mustard seed, turmeric, coriander, cumin, chilli and oil in a pan on medium heat.
2. Chop the onion and potato finely and stir this to the pan.
3. Cook while stirring over medium heat until tender.
4. Stir in the water a spoon at a time.
5. Place a spoonful in each warm dosa and roll it up.

Coconut Chutney
1. Put the mustard, cumin seeds, chopped garlic, grated ginger and oil in a pan on medium heat.
2. Cook for 3/4 minutes.
3. Grate the coconut and mix with salt, sugar and cooked spices.
4. Grind the mixture together adding the lime juice.

oh yes at last I have found a pancake that I can roll without breaking. I used half the quantity and made four 8 inch pancakes. I had the non stick pan
smoking and oiled it after each pancake again to prevent sticking. They kept well while I made the filling but need to do this first really. I put spinich in the filling and ate 2 all to myself they were fab.Really good for us gluten wheat free people and cheap!!
