Crisp orange shortbread

Lovely light shortbread, if you don't like lemon it can be changed for vanilla extract or just left plain

Ingredients

4oz margarine
2oz golden caster sugar
  grated zest 1/2 orange
6oz plain flour
1/2tsp baking powder

 

Method

  1. Heat oven gas 5
  2. Lightly oil a baking sheet.
  3. Beat the butter, then cream it with the sugar and orange zest until light.
  4. Stir in the flour and baking powder and mix together to form a dough.
  5. Divide the mixture into 10 balls, arrange on a baking sheet.
  6. Press each ball flat with the tip of a rounded blade knife.
  7. Chill for 15 minutes, then bake for 12-15 minutes until light golden.
  8. Leave on the baking sheet for 2 mins before releasing them with a palette knife.
  9. Slide onto a cooling rack.
  10. Will keep in an airtight container for up to a week

Temperature & cooking time:
10/15mins at Gas 5

Looks good - but I am worried that there is no warning about checking baking powder ingredients as most pots that people will have on their shelves will contain wheat flour.
