Citrus Sponge Slice

A traditional iced lemon sponge cake.

Ingredients

100 gSoftened Butter
100 gCaster Sugar
2 Eggs
2 Lemons Rind & Juice
100 gSelf Raising White Flour
1 tbspWater
2 tbspsLemon or Orange Marmalade
75 gSoftened Butter
150 gIcing Sugar
1 Lemon Rind

Method

  1. Beat together the butter and sugar.
  2. Beat in the eggs followed by the lemon rind, lemon juice and flour.
  3. Divide the mixture between two oiled & lined 20cm/8”round tins.
  4. Bake in a pre-heated oven for 20/25 minutes.
  5. When cold spread lemon or orange marmalade on one sponge layer and place the second sponge layer on top.
  6. To make the topping beat together the icing sugar and butter until soft and creamy.
  7. Spread the topping over the top of the cake.
  8. Decorate the top with a little grated lemon rind.
