Christmas Chocolate Brownie

Ingredients

100 gPrunes
50 gDried Cranberries
5 tbspsAmaretto or Fruit Juice
250 gSugar
3 Eggs
125 gDouble Cream
150 gSelf Raising Flour
200 gPlain Chocolate
100 gMacadamia Nuts
100 gPecan Nuts

Method

1.Cut the prunes into quarters and put them in a mug with the cranberries and Amaretto. Cover and leave overnight.
2.Beat together the sugar and eggs until light and fluffy.
3.Stir in the cream and flour.
4.Gently melt the chocolate then mix it in.
5.Stir in the soaked fruits & most of the macadamia and pecans.
6.Line a 20x30cm/8x12" oven dish with grease proof.
7.Pour in the mix & scatter remaining nuts on top.
8.Bake in a pre heated oven for 40/45 minutes.
