Cherry Rock Cakes
Ingredients
| 9oz | Flour |
| 2 tsp | baking powder |
| 4oz | Margarine |
| 2oz | light brown sugar |
| 3 1/2 oz | glace cherries |
| 2oz | currants |
| 1 | egg (beaten) |
| 2 tbsp | soya milk |
Method
- Pre Heat oven gas 6,
- Grease a baking tray
- Place flour, baking powder and margarine in a mixing bowl and roughly chop the margarine with a rounded blade knife.
- Rub the marg into the flour until it resembles fine breadcrumbs.
- Stir in sugar, cherries, currants, beaten egg and soya milk. Bring all the ingredietns together with your hands to form a stiff dough.
- Using a teaspoon dollop heaps of the mixture onto the prepared baking tray to make 16 buns. Space well apart.
- Sprinkle with golden sugar and bake in the oven for 15 minutes until lightly golden brown all over. Cool on a wire rack
