A cut and come again family style of cake when made in a loaf tin although it could be made in a round cake tin.

Ingredients

100 gButter
100 gCaster Sugar
2 Eggs
75 gSelf Raising White Flour
100 gGround Almonds
200 gGlacé Cherries

Method

  1. Cream together the butter and sugar until light and fluffy.
  2. Beat in the eggs.
  3. Stir in the flour and ground almonds.
  4. Slice the cherries in half and stir them into the mixture.
  5. Pour into an oiled and lined 1kg/2lb loaf tin.
  6. Bake in a pre-heated oven for 45/50 minutes.
  7. Leave the cake in the tin to cool.

Delicious and very easy to make. Made this as two 1lb loaves - 160°C (fan oven) for 30 minutes. Used wholemeal self-raising flour and added 1tsp baking powder.
