Nicki's recipe

Lovely and moist but need to be kept in the fridge or it goes mouldy very quickly

Ingredients

8oz  flour
1 teaspoon baking powder
1 level teaspoon of cinnamon
1/2 teasppon nutmeg
4oz light muscovado sugar
3oz grated carrot
3floz/75ml vegetable oil
7floz/200ml soya milk

 

Method

  1. Put flour, baking powder, cinnamon, nutmeg, sugar and grated carrot into a mixing bowl.
  2. You can add grated orange zest if you like.
  3. Add oil, soya milk and stir until combined.
  4. Pour into a lined/greased cake tin 8" or muffin cases.
  5. Cook preheated oven gas 6 for about 30 minutes, until cake is cooked through.

Temperature & cooking time:
30mins at Gas 6
