Butterfly Cakes

Based on the simple fairy cake recipe these cakes have been enjoyed at many birthday parties.

Ingredients

75 gButter
75 gCaster Sugar
2 Eggs
¼ tspVanilla Extract
75 gSelf Raising White Flour or
75 gSelf Raising Wholemeal Flour or
75 gGluten Free Self Raising Flour
1 tbspMilk
50 gButter
75 gIcing Sugar

Method

  1. Beat together the butter & sugar until light and fluffy.
  2. Beat in eggs and vanilla.
  3. Beat in the flour and milk.
  4. Spoon the mixture into paper cake cases standing on a baking tray.
  5. Bake in a pre heated oven for 10/12 minutes.
  6. When the cakes are cold slice off the top of each one.
  7. Cut each top in half.
  8. In a bowl mix together the butter and icing sugar.
  9. Spread a little of this on top of each cake.
  10. Press two sponge halves sideways into the icing to make the ‘butterflies’.

Great litle cakes made mine with chocolate drops, will defo make them again.

Delicious light fluffy cakes. Cannot tell they are gluten free using Dove Farms SR flour. Will be making these a lot (especially as my little girl is trying to eat them as fast as I can make them!)
