Our recipe

For a special breakfast serve these blueberry pancakes with a drizzle of maple syrup and a handful of fresh blueberries. This recipe makes about 8 pancakes the size of drop scone.

Ingredients

125 gSelf Raising Flour or
125 gGluten free Self Raising Flour Blend
1 Egg
150 gMilk
25 gMelted Butter
75 gBlueberries
1 tbspOil
1 tspBaking Powder
1 Syrup to serve
25 gBlueberries to serve

Method

  1. Mix together the flour and baking powder.
  2. Add the egg then stir in the milk a little at a time.
  3. Beat to a smooth batter. If using Gluten Free Flour, add an extra 2tsp of liquid.
  4. Stir in the melted butter and blueberries.
  5. Heat a little oil in a frying pan until very hot.
  6. Put spoonfuls of batter into the pan to make small rounds.
  7. Cook until small bubbles start to appear on the top of the pancakes.
  8. Turn the pancakes over and cook on the other side.
  9. Serve warm, drizzled with maple syrup and fresh blueberries.

Great recipe! Simple and effective - I followed the recipe exactly and they turned out fluffy and delicious. It has become one of my favourites, thank you!

Made these with egg replacement & without the fruit - just lemon juice & maple syrup - lovely
