Ingredients

142 ggluten free sr flour
113 gcaster sugar
113 gsoft marg
1 tspGF baking powder
2 large eggs

Method

  1. Place all ingredients in bowl and mix with hand blender for 2 minutes only.
  2. Place in preheated oven,time depends on fairy cakes or whole sponge.
  3. Allow to cool and decorate.

Temperature & cooking time:
180 deg C 20min fairy cakes,. 30 sponge

Made this sponge for the 1st and last time it is heavy and flat going to have to use it for a trifle sponge ,followed this to the letter,dont bother making this wasting money and time

Lovely light fluffy sponge. Added ground almonds and cherries. Also works as microwaved sponge puddings with jam/syrup/stewed fruit on the bottom.
