Our recipe

This recipe is for bakeries and serious home bakers. It requires a mixer and a deck oven. It is possible to do it at home but you will need to get your oven very hot. It should scale up easily.

3 kgHeritage Flour
30 gDry Instant Yeast
2.3 kgWater
60 gSalt

Put the ingredients in a mixer.

  1. Add the water.
  2. Mix on a slow setting for 10 minutes.
  3. 60 minute bulk proof.
  4. After the bulk proof fold, wait 30 minutes and then divide.
  5. Proof again till ready
  6. Bake in deck oven 250°C
