- Doves Farm Foods have been working the 1994 Gluten Free Codex Standard of <200ppm for many years.
- A new Codex Standard of <20ppm requires compliance by 2012 for refined starch products & naturally gluten free foods to be labelled ‘Gluten Free.’
- A new ‘Low Gluten’ label is available to refined starch products with a standard of <100ppm
- DFF do not produce refined starch products and are working with suppliers to ensure products labelled as gluten free can meet the <20ppm during 2009 and in advance of 2012.
- Crops which do not contain gluten cannot use the ‘Low Gluten’ label, (even though they are susceptible to low levels of background cross contamination from agricultural production.)
- All Gluten Free ingredients are sourced from approved suppliers.
- All ingredients used in Gluten Free products must be those that are specified in the product spec, recipe or data sheet.
- Gluten Free finished products are tested for gluten as part of the in-house sampling plan.
- All staff working with Gluten Free products or raw materials are given Gluten Free training
