always good to see buckwheat recipes but they can be made in the traditional breton way. ie ..with flour and water only

Its a lot easier to cook them using milk and eggs, no doubt, but they loose all the charm and goodness in my view. eggs and milk are not exactly a lot of peoples best foods.

you will need to persevere if using flour and water, no need to stand the mix by the way. find a completely flat pan with no raised sides . the heavier the better. spread the mix by twisting the pan,s handle or use a special tool to move it into a right size and thickness.  you then need a flat wide knife to gradually lift the sides of the gallet from the pan before turning,by hand, and giving it 30secs on the other side.

well worth the effort to learn, and avoid the dairy products
