Topic: gluten free flour substitution

Hello all
I am new to this site and gluten free, I just recently found the best dough recipe by HFW which uses plain white flour and white bread flour, can I just substitute for the doves farm gluten free varieties or is it much more complicated than that??
please help I am very confused, many thanks

Hello, normally when you mix plain white flour and strong bread flour you get a dough with similar characteristics to the French bread flours. Unfortunately no Gluten Free varieties don't act the same as a wheat flour, due to the fact they are missing the proteins that hold the flour together in a dough. The best advice I can give is try some Gluten Free recipes and see what suits you best. There's no magic bullet here but xanthan gum helps to create a thicker doughy mixture.
