Types of Grains

It can seem confusing looking at all the different types of flour on a shop shelf when they all contain ground wheat. However, there are particular types of flour suitable for different purposes.

At Doves Farm we purchase many different wheat varieties blending them to produce flours with characteristics particularly suited to a specific end use. The terms strong, plain and self-raising are not governed by law but are commonly accepted terms in the milling industry.

The history and origins of wheat grain as a food lie in the wild grass seeds, which were harvested and stored by early man. Grass like wheat is thought to have been purposefully cultivated in the Middle East some 8,500 years ago. Many archaeological sites and ancient writings reveal the existence of early circular storage pits used for conserving the harvested grains which would keep well from year to year.  

While rice remains a staple food for about a third of the worlds population most modern diets contain fewer whole grains and more refined grain products, than in previous generations.
