Understanding the special needs of catering and the food service industry is important to us.

Our snack bars, flapjacks, award winning Wholewheat Digestives and gluten free cookie twin packs that are ideal for vending machines, cafe and canteen, impulse snacking, travel and leisure outlets where they have wide appeal as ‘multiple benefit’ indulgent snacks. Gluten Free Brown Rice Pasta has recently been added to the catering range.

We offer a large range of speciality and special diet flours in sacks to enhance the ingredient pallet for chefs and caterers. These can be found in our Sacks and Bulk section.

 

Bicarbonate of Soda (3 x 1kg)

Bicarbonate of Soda is a home baking raising agent and a household cleansing friend. It can be used instead of baking powder and will help dough to rise.

Gluten Free Batter Mix (5 x 1kg)

Create gluten free Yorkshire puddings, pancakes and batter items for frying.
 

Batter Coating
1. Mix 500g batter mix with 600ml of water to form a smooth paste.
2. Dip item to be cooked in any gluten free flour.
3. Dip floured item in prepared batter mix.
4. Fry in hot oil.

Gluten Free Biscuit crumb Organic & Fairtrade 4kg

This 4kg catering pack of coarse golden cookie crumb made from naturally gluten free rice, is ideal for cheesecake bases.

Cheesecake Base

1. Melt 300g butter.

2. Stir in 1kg Cookie Crumb.

3. Press into oiled cheesecake tins.

4. Chill for 30 minutes.

5. Add cheesecake topping as per your recipe.

Gluten Free Custard Mix (3 x 1kg)

A 3 x 1kg gluten free catering pack of fine white floury custard powder lightly flavoured with vanilla.

Custard

1. Mix together 250g custard powder, 250g sugar 1lt milk into a smooth paste.

2. Heat 4.7lt milk then stir it into the paste.

3. Return everything to the heat.

4. Whisk over gentle heat until it thickens & bubbles start to appear.

Gluten Free Golden Breadcrumbs (6 x 1kg)

This 6kg catering pack is perfect for use in settings such as restaurants and schools where large quantities of our product are needed. Use as required for gluten free scotch eggs, fishcakes, rissoles and croquets or as a golden topping.


Crumb Coating

1. Dip item to be cooked in beaten egg.

2. Roll item in Golden Breadcrumbs.

3. Fry in hot oil.

Gluten Free Rusk Breadcrumb (3 x 1kg)

Good for adding texture in a variety of gluten free foods. Ideal for making your own sausages.

Herb & Onion Stuffing
1. Mix together 1kg Rusk Crumb, 150g diced onion & 75g herbs and seasoning.
2. Add 300ml oil and 2lt water.
3. Press into oiled baking trays and bake for 25/30 minutes in an oven pre heated to 190°C/Fan170°C/375°F/Gas.

For sausage filling mix 1kg Rusk Crumb with 5kg ground meat and seasoning then fill sausage casings.

Gluten Free Sponge Mix (3 x 1kg)

We have created this 3kg catering pack of sponge mix especially for food service settings where gluten free cake or sponge is required. Blend with water, oil and egg for basic sponges or add additional flavourings.


Basic Sponge Cake

1. Beat together 1000g Sponge Mix with 325g Egg and 650ml Milk.

2. Spread into oiled baking trays.

3. Oven bake at Fan 170˚C for 30 minutes.
