The history and origins of wheat grain as a food lie in wild grass seeds, which were harvested and stored by early man. Grass, like wheat, is thought to have been purposefully cultivated in the Middle East thousands of years ago. Many archaeological sites and ancient writings reveal the existence of early circular storage pits used for conserving the harvested grains from weather and animals from one year to another.
During 10,000 years of cultivation, several forms of wheat have evolved under human selection. Within each species, wheat cultivars are further classified by farmers depending on the characteristics of each grain.
